a few recipes

my first recipe post.
:)

i have mentioned it before, but we try our hardest to eat a primarily whole foods, plant based diet.

these two recipes are staples around here and enjoyed by everyone.

if i share a recipe on here, you can be guaranteed that it is not only baby/little boy approved, but has also been approved by my 6'2", 230lb football coach!

texas caviar


1 can chickpeas, drained and rinsed (or 2 cups fresh)
1 can black beans, drained and rinsed (or 2 cups fresh)
1 can corn, drained and rinsed (or 2 cups fresh)
1 cup cherry tomatos, chopped
3 green onions, chopped
lime juice from 3 limes
cayenne, garlic and salt to taste (be generous!)

combine all ingredients and let marinate in the fridge for at least 30min.

i serve this with rice, tortillas, home-made black bean hummus and home made guacamole, 
chips and salsa. 
i usually mix everything together with the rice while my husband enjoys it in the tortillas!
you can also eat it with salad or in lettuce wraps!

Black Bean Hummus


we eat our black bean hummus with so so much!
it not only is a side for a lot of our meals, but is served with veggies at lunch, used as a spread to make vegan quesadillas, served with chips as a dip, spread on veggie sandwiches and more!
we love it!

i have gotten to where i just add stuff without paying attention to measurements, so the recipe will be primarily the ingredients!
you can't really mess it up though...feel free to add whatever your family enjoys!

2 cups black beans fresh
(i soak my beans over night, cook them in my crockpot, and then measure them out into two cup portions to store frozen in glass mason jars. i then just pull them out to thaw the morning i want 
to use them)
olive oil (i just pour a little in, but it is probably 1-2 tbsp)
i always have some liquid from the beans, but if it needs a few tbsp of water, feel free to add until it is the desired consistency.
several garlic cloves, minced
chopped cilantro
cumin, salt, cayenne to taste

add all ingredients in a food processor and blend!

enjoy!!

  1. The Texas Caviar looks so yummy! I'm going to have to try that! We've been practically living off of frozen meals and fast food since I had the baby but I NEED to get back in the kitchen!

    1. oh girl, i completely understand!!!!! after a baby, all cooking goes out the window for a bit!! ;) the good thing about the Texas Caviar is that it is suuuuper easy!! xoxo
