pumpkin. latte. vegan. delish.

now i know i am not alone when it comes to loving all things pumpkin.

pumpkins and fall go hand in hand!

and while i love a good pumpkin spice latte from my favorite local coffee shop, i wanted to try one at home that would be a little easier on my wallet.

i have tried a few recipes and thought i would share my top two favorites!

recipe #1
(adapted from Happy Herbivore)

brew 1 cup of coffee and pour into a mug.

add 1/3 cup of almond milk (i used original).

add 1-2 tbsp of agave syrup (or sweeten to taste).

mix in 1 tsp of pumpkin pie spice.

recipe #2
(recipe from lunchboxbunch)

1 1/2 cup of almond milk.

1-2 shots espresso or 1/2 cup strongly brewed coffee

1 1/2 tbsp canned pumpkin puree.

sweeten to taste with agave syrup.

1/2 tsp pumpkin pie spice or cinnamon/nutmeg.

1/2 tsp vanilla extract.

dash cayenne. 

stir in all ingredients in a sauce pan and let simmer until mixture comes to a low boil.
(if you are using espresso, you can wait until mixture is done and then add at the end)
