a recipe and a link-up party!


:: vegan french toast ::

growing up, one of my favorite breakfast treats was french toast. my mom had the best french toast recipe and would always serve it up with some sprinkled powdered sugar, fresh strawberries and syrup. i may have been on a sugar high by the time i was done eating it, but it was truly divine.

since trying to shift the majority of our eating habits, i have tried to find some replacement recipes for some of those childhood favorites.

and this fresh toast recipe was a definite win!!
absolutely delicious,
vegan,
and incredibly EASY!! (which will always make it a win in my book :))



:: ingredients ::

2-3 ripe bananas
3/4 cup of non-dairy milk (i use coconut milk)
1 1/2 tsp of cinnamon
1 tsp pumpkin pie spice (optional)
1 tsp vanilla
bread (i use a vegan, gluten free bread)

:: directions ::

blend all ingredients in a blender or food processor and pour into a wide dish.
dip each piece of bread into the mixture, coating both sides of the bread.
cook in vegan margarine in a medium-hot skillet until golden brown.
top with your favorite toppings and enjoy!

(this recipe does not need it at all, but if you want a little extra sweetness, drizzle with a little maple syrup)
