link up: summer recipes!



i am so excited to be joining such a wonderful group of ladies again for this months link-up: 
summer recipes!

a dear friend of mine shared this recipe with me via pinterest not too long ago and i have been addicted ever since. it is a great way to incorporate some good fats and protein into your diet and is so incredibly versatile. we have used this hummus for dipping, as a spread on quesadillas and sandwiches, and in our vegan burrito bowls.

this would be a perfect summer recipe to take along to a party or to simply have on hand as a tasty snack. hand your little ones some veggies and i'm sure they will dip away...my littlest has actually tried to eat it by the spoonful. :)





AVOCADO HUMMUS

INGREDIENTS
1 15oz can of chick peas, well drained
2 medium ripe avocados, cored and peeled
3 Tbsp olive oil
1 1/2 Tbsp tahini
3 Tbsp fresh lime juice
1 clove garlic, peeled
salt and freshly ground black pepper
1/8 tsp cumin
1-2 Tbsp finely chopped cilantro leaves, for topping (i actually added in a few additional Tbsp to the actually hummus...we like us some cilantro over here!)
red pepper flakes for topping, optional

DIRECTIONS
add chick-peas, olive oil, tahini, lime juice and garlic into a food processor and pulse until smooth.
season with salt and pepper to taste.
add in cumin, avocados and extra cilantro (if desired) and pulse again until smooth and creamy.

serve topped with more olive oil (if desired) and sprinkle with cilantro and red pepper flakes.
